This brown rice vegetable bowl (vegan & compliant on Lifestyle & Kickstart level — plus Performance level for vegetarians) has been my lunch for the entire week. It was warm, filling, and totally satisfying after tough morning workouts on these cold winter days.

2 cups of brown rice

2 red onions, diced

2 carrots, peeled and diced

4 cloves of garlic, minced

8 stalks of asparagus, diced

1 large head of broccoli, chopped

1 tablespoon of extra virgin olive oil

Himalayan salt to taste

some of the ingredients used – in a separate version I used chopped green beans instead of asparagus


  1. Cook the brown rice. {Put the 2 cups of rice in 3 cups of water. Leaving the pot uncovered, bring the water to a boil. Turn off the heat. Lightly stir the rice. Cover the pot. Let the brown rice sit for another 10 minutes before serving.}
  2. Sautee the onion and garlic in the extra virgin olive oil until soft and light brown.
  3. Add the remaining chopped vegetables and salt. Stir together. Cover the pan and cook for 10-15 minutes – until soft. You can add 1-2 tablespoons of water as the vegetables are cooking.
  4. Once the vegetables have been cooked, add the brown rice and mix together well. Serve and enjoy!
