Although I eat salmon quite often, it still feels like a decadent treat every time I have it. The recipe below is one of the simplest dinners I cook on a regular basis. It is also one of my favorites.


2 salmon fillets

1 cup cauliflower florets

1 cup string beans, chopped

1 cup butternut squash, diced

2 tablespoons of extra virgin olive oil (approx)

1 1/2 teaspoons of garlic granules

Himalayan salt to taste


  1. Preheat the oven to 190 C.
  2. Wash all the chopped and diced vegetables. Lightly coat a baking dish with extra virgin olive oil and add the vegetables. Coat the vegetables in the olive oil (add more if needed). Sprinkle salt and the garlic to season the vegetables. Place in the oven. Bake for 50 minutes.
  3. As the vegetables are baking, prepare the salmon. In another baking dish, coat the 2 salmon fillets with the oil. Season with salt. Put in the oven – bake for around 25-30 minutes, depending on how well done you like your salmon. {After the vegetables have basked for 20 minutes, I just pop the salmon into the oven as well so everything is ready at the same time.}

As I said, it’s simple, but I really like the combination of flavors.
